Ingredients
1 pack turkey mince - 2% fat
Herbs and spices - oregano, garlic granuals, ceyenne pepper, cumin
Olive oil
1 red onion
1 tin of chopped tomatoes
1 tin kidney beans, drained and washed
1/2 tin water
1 chicken or vegetable stock pot
50g dark chocolate
150g long grain rice
Natural yogurt to serve - optional
Preparation
Step 1
Chop onion and warm spices for one minute in pan. Add oil and onion and fry over a medium heat until softened.
Step 2
Add mince and cook until browned, add tomaotes and washed and drained kidney beans. Add half a tin of water. Add stock pot, stir well and break in the dark chocolate.
Step 3
Cook for 30 minutes to 3 hours. Put rice on 20 minutes before you are ready to serve. Cook as per packet instrcutions.
Step 4
Plate up and serve with a big dollop of plain yogurt.
