Complemented by a refreshing salad boasting crisp peppers, juicy tomatoes, creamy avocado, and crunchy cucumber, all brought together with the sweet pop of pomegranate seeds and the nutty richness of pecan nuts. Ingredients
One pack of king prawns
100g couscous
150ml boiling water
Herbs and spices - 1 tsp each - oregano, garlic granuals, cumin, cayenne pepper
Small handful of dried cranberries
10 pecan nuts - chopped
1 tomato - chopped
1/3 cucumber - chopped
1/2 avocado - chopped
1/2 red pepper - chopped
Small bunch parsley - chopped
Small tub of pomegranate seeds
Preparation
Step 1
Boil water. Warm spices in pan for around a minute, remove from heat. Add the couscous, dried cranberries and the boilng water and stir well. Place lid on pan and put to one side.
Step 2
Prepare salad, chop pepper, tomato, cucumber and avocado. Squeeze lemon and retain the juice. Toss half the lemon juice in with the salad and add a sprinkling of oregano.
Step 3
Remove lid from couscous, stir in remaining lemon juice and chopped pecan nuts, then divide into two portions.
Step 4
Plate up - divide the salad, the couscous and the parwns into two portions plate up and sprinkle with more oregano and the pomegranite seeds.
